In a small bowl combine the oil, lemon juice, paprika, salt, and pepper; set aside. 2. Place chicken on the unheated rack of a broiler pan. Brush both sides of chicken with the oil mixture. Broil 4 to 5 inches from heat for 10 to 12 minutes or until chicken is tender and no longer pink (170 degrees F), turning once. Cool chicken slightly; coarsely chop chicken. 3. To serve, spread Hummus over the toasted pita halves. Top with the chicken, tomatoes, and cucumber. If desired, garnish with cilantro and serve with yogurt. Makes 4 servings. " |
